Milk Type: Cow
Dietary: Animal Rennet, Unpasteurised
Origin: England

“Stichelton is one of the very few English blue cheeses made on the farm with raw milk, using traditional techniques that offer complexity and length of flavour of a different sort to that of pasteurised cheese. We have stuck to our principles and painstakingly poured all the traditional knowledge and passion for authentic cheesemaking we could muster into Stichelton. Enjoy!”

Complex. Tangy, acid notes tempered by its creaminess

Really complex. Definitely get the acidic notes, there’s an unmistakable tang which takes a while to get away from but is not unpleasant.

Bought from Neal’s Yard Dairy.
