“Cashel Blue’s Shepherd’s Store is a traditional, European style semi-hard cheese. As a seasonal product, it is made only between the months of February and September, and is aged for a minimum of six months. Shepherd’s Store offers a firm yet delicately creamy texture with a full yet not strong flavour combining a complex mix of both savoury and gentle, sweet notes.Creamier in style than Manchego or Pecorino, this is a distinctly Irish traditional farmhouse cheese.”

Delicious and earthy

by AussieCheeseLover on 11 May 2021

I bought this at Borough Market in London on the cheesemonger’s recommendation and it was really delicious. It had everything I like in a harder cheese – strength but smooth. I loved also how it had a sheep flavour but it was not too strong. Definitely adding to my favs.
