“This is a small, approx. 1kg aged goat cheese with a natural rind, 2 – 4 months old. Iona developed this as an homage to tasty French aged cheeses and it remains one of Iona’s favourites. It has a thin natural rind and a very distinctive, creamy and complex flavour, semi-soft interior.
It is named after one of the camps created by the railway workers during their time building the Ribblehead Viaduct, which is less than a mile away from the farmhouse where Ribblesdale first started. It is a very unusual and very tasty cheese.”
