Challenging, but worth it!

A pungent, peachy coloured rind with occasional blue veining coming to the surface. The paste is pale gold, with a distinctive, powerful flavour – although usually vein less, the classically mineral flavour of the blue still comes through well, with the bitter, slightly musty hoppiness of the rind lingering pleasantly.
