This is a mould-ripened Jersey cow’s cheese. Rich and creamy with a beautiful golden colour when cut. From about 3 weeks old it will begin to soften and run, creating a luxurious, deeply flavoured cheese. Old Burford are sold in 220g rounds and are best eaten at 3-8 weeks of age.
