This cheese has earthy tones on the nose and is young tasting as it first reaches your taste buds. Initially tasting a lightly like a feta but the flavours then develop into a more agricultural/sour/fermented flavour which isn’t unpleasant.
Texture wise it is firm, but not solid, with a slight spring, giving the impression it would roll well if pushed.
I would buy again, and think it would go well with a light roast coffee.
