Simple, pleasant and very palatable.
I wasn't sure about the hint of Whiskey as I'm not a Whiskey drinker but it's very subtle and complimentary to the way the taste evolves. For a cheddar this quite a soft cheddar but not at all rubbery.
I think this cheese would make a great background staple on a variety cheeseboard alongside stronger cheese providing a simple, pleasant and palatable backdrop.
No doubt this cheese would sit nicely alongside a Whiskey, Red Wine or even a good Coffee if you're not a drinker.
