Matured to around 8-10 weeks, it is firmer, in terms of texture, compared with other Blues.
It’s made from the milk produced by the Shorthorn cows who graze on the rolling hills at the nearby hamlet of Micklethwaite, and is a firm-bodied cheese with delicate bluing.”
