Tangy, lactic little goat’s cheese
A small, cylindrical cheese with a bloomy rind over a thin ash layer.
The paste of the cheese is fresh and crumbly, and melts to a lovely smoothness on the palate, releasing the classic fresh, lactic flavours of young goat’s cheeses. The rind brings an earthy note to balance it with the ash providing tanginess and a little sweetness.
